Preparation

  • Cook the pasta according to package instructions until it’s al dente. Drain and set aside.
  • In a large skillet, drizzle olive oil over medium heat and add shrimp. Cook for 2-3 minutes on each side until pink. Remove and set aside.
  • In the same skillet, add minced garlic and cook for 1 minute.
  • Add halved cherry tomatoes, cooking for 3-4 minutes until they soften.
  • Stir in fresh spinach, allowing it to wilt.
  • Pour in heavy cream, stirring to combine, bringing to a gentle simmer.
  • Add Parmesan cheese and oregano, seasoning with salt and pepper. Stir until combined.
  • Bring back the cooked pasta and shrimp into the skillet, tossing to coat in sauce.
  • Serve garnished with freshly chopped basil.
