Preparation

  • Start by toasting the dried guajillo and ancho chiles in a skillet over medium heat for 2-3 minutes until aromatic. Remove the stems and seeds from the chiles.
  • In a blender, combine the toasted chiles, garlic, chopped onion, cumin, oregano, ground cloves, ground cinnamon, and one cup of beef broth. Blend until smooth.
  • Season the beef chunks liberally with salt and pepper.

Cooking

  • In a large pot over medium-high heat, heat a drizzle of oil. Sear the beef until browned on all sides.
  • Pour the blended chili sauce over the seared beef. Add the remaining beef broth and vinegar, stirring to combine.
  • Cover the pot, reduce the heat to low, and let it simmer for 2-3 hours, or until the beef is tender.

Final Preparation

  • Once cooked, remove the beef from the pot and shred it into bite-sized pieces.
  • Stir the shredded beef back into the flavorful broth.
  • Warm the corn tortillas and fill each with the tender birria, garnishing with fresh cilantro and diced onion.
  • Serve and enjoy the delicious feast!

Notes

For deeper flavor, marinate the beef chunks in the chili sauce for a few hours or overnight. Add a splash of lime juice if desired. Extra ingredients like hot sauce can make the dish spicier. Serve with rice or beans for added heartiness.
