Tropical Cheesecake Fruit Salad

Ingredients
  

Cheesecake Filling

  • 8 ounces cream cheese, softened
  • 3.4 ounces instant cheesecake pudding mix (unprepared)
  • 1 cup International Delight French Vanilla Creamer adjust as needed for consistency

Fresh Fruits

  • 1 pound strawberries, hulled and sliced
  • 4 mandarin oranges, peeled and sectioned
  • 20 ounces pineapple tidbits, drained
  • 3 kiwi, peeled and cut into half moons
  • 2 mangoes, cut into bite-sized chunks
  • 1 banana, cut into coins toss with lemon juice before adding
  • 1/2 lemon juice of to prevent browning of banana

Instructions
 

Preparation

  • Whip the softened cream cheese in a medium-sized bowl with an electric mixer until smooth and creamy.
  • Add the instant cheesecake pudding mix and beat until fully combined.
  • If too thick, add a splash of the French Vanilla Creamer. Gradually incorporate the remaining creamer until you reach a silky smooth consistency.

Combine Fruits

  • In a large mixing bowl, combine the strawberries, mandarin oranges, drained pineapple, kiwi slices, and diced mangoes.
  • Gently fold in the creamy cheesecake mixture to coat all the fruit.
  • In a small bowl, toss the banana coins with lemon juice, drain any excess juice, and fold them into the fruit salad.

Chill and Serve

  • Chill the salad in the refrigerator until ready to serve, or enjoy immediately.

Notes

For added texture, garnish with shredded coconut or toasted nuts. You can customize the fruits based on availability or preference. Allowing the salad to sit helps flavors meld together.
