For the Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the eggs, crushed pineapple with juice, and toasted chopped pecans until well combined.
  • In a separate large bowl, combine the all-purpose flour, granulated sugar, and baking soda. Stir until evenly mixed.
  • Gently fold the egg mixture into the flour mixture using a spatula, being careful not to overmix.
  • Grease a 9×13 inch baking dish with butter or cooking spray.
  • Pour the batter into the prepared baking dish, smoothing the top with a spatula.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely in the dish once it’s out of the oven.

Frosting

  • Use an electric mixer to blend the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  • If the frosting is too thick, add a splash of milk to adjust the consistency.
  • Spread the frosting evenly over the cooled cake.

Notes

Make sure both the cream cheese and butter are softened and at room temperature for a smooth frosting. You can toast pecans for enhanced flavor. For a fresher taste, consider using finely crushed fresh pineapple instead of canned.
