Preparation

  • Preheat your oven to 356 °F (180 °C) and grease a tart pan to prevent sticking.
  • If starting with whole nuts and oats, grind them into flour. In a mixing bowl, combine almond flour, rolled oats, cocoa powder, salt, soft dates, maple syrup, and melted coconut oil. Blend until the mixture becomes sticky.
  • Press the sticky mixture into the prepared tart pan evenly, ensuring the bottom and sides are well covered. Bake for 15-20 minutes until the crust is firm and lightly browned.

Filling Preparation

  • Heat the frozen raspberries in a saucepan until well mashed. Strain the mashed raspberries through a fine sieve to separate the juice from the seeds.
  • In a separate bowl, dissolve cornstarch and agar powder in a small amount of water. Combine this slurry with raspberry juice and remaining filling ingredients in a pot. Heat while stirring, eventually bringing the mixture to a boil.
  • Once boiling, reduce the heat and let it simmer until it thickens.

Assembly

  • Pour the raspberry filling carefully into the cooled tart shell. Refrigerate for at least 2 hours or preferably overnight.
  • Before serving, garnish the tart with fresh raspberries, red currants, pomegranate seeds, and sprinkles.

Notes

For perfect results, ensure dates are soft enough to blend smoothly. Use fresh raspberries if desired. Experiment with different fruits and involve children in decoration to make baking fun.
