  • 1/2 cup heavy whipping cream Use full-fat for extra creaminess.
  • 1/4 cup mayonnaise Consider using organic mayonnaise.

Salad Ingredients

  • 1 cup diced Granny Smith apples, cored with the skin left on
  • 1 cup diced Gala apples, cored with the skin left on
  • 3/4 cup finely diced celery
  • 1/2 cup halved green seedless grapes Plus extra for garnish.
  • 1/2 cup halved red seedless grapes Plus extra for garnish.
  • 1/2 cup chopped walnuts Toast lightly to enhance flavor.
  • 1 tablespoon lemon juice Helps prevent apples from browning.
  • 1 tablespoon granulated sugar Balances the flavors.

Preparation of Dressing

  • In a medium-sized mixing bowl, add the heavy whipping cream and beat it with a handheld mixer on high speed until stiff peaks form.
  • Once the desired consistency is achieved, gently fold in the mayonnaise until well combined. Set aside.

Preparation of Salad

  • In a large mixing bowl, combine diced Granny Smith apples, Gala apples, finely diced celery, halved green grapes, and chopped walnuts.
  • Sprinkle the lemon juice and granulated sugar over the mixture to prevent apples from browning and stir gently to coat.
  • Fold in the creamy mayonnaise mixture carefully to maintain some of the salad's crunch.
  • Cover tightly with plastic wrap and refrigerate for about one hour.
  • Before serving, garnish with reserved halved grapes.

Notes

For lighter options, swap heavy cream with Greek yogurt or light mayonnaise. You can also experiment by adding dried cranberries or raisins.
