Preparation

  • Cut the watermelon into chunks, discard the rind, and blend until smooth in a powerful blender. Strain the puree if you prefer a silkier texture.
  • In a large mixing bowl, combine the pureed watermelon with heavy cream, milk, sugar, vanilla extract, lemon juice, and a pinch of salt. Stir gently until the sugar dissolves.

Churning

  • Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions, typically for about 20-25 minutes or until it reaches a creamy consistency.
  • Transfer the soft-serve ice cream to an airtight container. Smooth the top and cover. Freeze for at least 2-3 hours or until fully solidified.

Serving

  • Scoop into bowls or cones, optionally adding more watermelon pieces or mint leaves for garnish.

Notes

For a no-churn method, freeze the mixture in a container and stir every 30 minutes until firm. Ensure the watermelon is ripe for the best flavor, and avoid over-churning to maintain creaminess.
