For the Soup

  • 4 cups chicken broth The flavorful base of the soup, simmered for depth.
  • 2 cups water To adjust the soup’s consistency and enhance flavor.
  • 2 cups bok choy, chopped Fresh and crisp, providing a pop of color and nutrition.
  • 1 cup sliced mushrooms Earthy notes that add depth to the broth.

Preparation

  • In a mixing bowl, combine the ground chicken or turkey with soy sauce, sesame oil, grated ginger, and minced garlic. Mix thoroughly until all ingredients are well blended.
  • Take a wonton wrapper and place about a teaspoon of the filling in the center. Moisten the edges of the wrapper with water to help seal it.
  • Fold the wrapper in half to form a triangle and press the edges firmly to seal. Bring the two corners of the triangle together and pinch to seal securely. Repeat this process with the remaining wonton wrappers and filling.

Cooking

  • In a large pot, pour in the chicken broth and add the water. Bring the mixture to a gentle boil over medium-high heat.
  • Once boiling, carefully add the filled wontons to the pot. Cook for about 5-7 minutes or until the wontons start to float to the surface.
  • Stir in the chopped bok choy and sliced mushrooms, and let everything simmer for an additional 2-3 minutes until the vegetables are tender.
  • Season the soup with salt and pepper to taste. Ladle the soup into bowls and garnish with freshly sliced green onions before serving.

Notes

Make a double batch of wontons during your free time and freeze the extras. Consider adding other vegetables for more color and nutrition or adding a squeeze of sriracha for a spicy kick.
