Weeknight Wonton Soup

Ingredients
  

For the Wontons

  • 1 package wonton wrappers Thin and delicate
  • 1 pound ground chicken or turkey Tender and juicy
  • 1 tablespoon soy sauce For umami flavor
  • 1 teaspoon sesame oil Adds nutty depth
  • 1 teaspoon grated ginger For warmth
  • 1 clove garlic Minced for flavor

For the Soup

  • 4 cups chicken broth Rich and savory
  • 2 cups water To enhance broth
  • 2 cups bok choy Chopped, fresh, and crisp
  • 1 cup sliced mushrooms Earthy and tender
  • 2 green onions sliced For garnish
  • Salt and pepper To taste

Preparation

  • In a mixing bowl, combine ground chicken or turkey, soy sauce, sesame oil, grated ginger, and minced garlic. Mix until well blended.
  • Place a teaspoon of the filling in the center of a wonton wrapper. Moisten the edges with water, fold the wrapper in half to form a triangle, and press to seal.
  • Bring the two corners of the triangle together and pinch to seal completely. Repeat until all wrappers and filling are used.

Cooking

  • In a large pot, bring chicken broth and water to a boil. Gently add the wontons and cook for 5-7 minutes, or until they float.
  • Stir in bok choy and mushrooms, cooking for an additional 2-3 minutes until tender. Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with sliced green onions before serving.

Notes

For a richer broth, simmer longer before adding wontons. Wontons can be frozen before cooking; add them directly to boiling broth when ready. Experiment with different vegetables for added nutrition.
