  • Once melted, add the chocolate to the cream cheese mixture along with the vanilla extract and stir until fully combined.
  • Gradually fold in the graham cracker crumbs until well mixed.
  • Scoop small portions of the mixture and roll into balls, about 1 inch in diameter. Place on a parchment-lined tray.
  • Freeze the balls for at least 1 hour or until firm.

Coating

  • Melt the remaining 1/2 cup of white chocolate chips in the microwave, stirring every 20 seconds until smooth.
  • Dip each cheesecake ball into the melted white chocolate, ensuring they are fully coated.
  • Roll the chocolate-coated balls in crushed graham crackers for added texture, then return to the tray.
