Preparation

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

  • Gradually add the graham cracker crumbs until a dough-like consistency forms.

Forming Balls

  • Roll the mixture into small balls, about 1 inch in diameter, and arrange them on a parchment-lined baking sheet.
  • Chill the balls in the refrigerator for at least 1 hour to firm up.

Coating

  • Melt the remaining white chocolate chips in the microwave, stirring every 30 seconds until smooth.
  • Dip each chilled cheesecake ball into the melted white chocolate to coat thoroughly.
  • Place them back on the parchment paper to set.
  • For an elegant touch, top each ball with a fresh raspberry or drizzle with extra melted white chocolate.
  • Refrigerate for an additional 30 minutes before serving.
