For raspberry sauce

  • 1 cup fresh raspberries vibrant and juicy
  • 0.25 cup sugar to sweeten tartness
  • 1 tablespoon lemon juice adds freshness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, combine flour, baking powder, and salt.
  • In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, incorporating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry mixture into the butter-sugar blend, alternating with whole milk. Begin and end with dry ingredients.
  • Fold in melted white chocolate and mashed raspberries.
  • Divide the batter between prepared pans and smooth the tops. Bake for 25-30 minutes until a toothpick inserted comes out clean.

Creating Raspberry Sauce

  • In a saucepan, combine fresh raspberries, sugar, and lemon juice over medium heat, stirring until thickened. Cool completely.

Frosting Preparation

  • Beat together softened butter and powdered sugar until creamy. Gradually mix in melted white chocolate, heavy cream, vanilla extract, and salt until light and airy.

Assembly

  • Once cakes are cooled, spread frosting on the first layer and drizzle with raspberry sauce. Place second layer on top.
  • Cover the cake with remaining frosting and garnish with fresh raspberries and additional raspberry sauce.
