Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Grease your springform pan generously.
  • In a mixing bowl, combine graham cracker crumbs and melted butter, then pack firmly into the base of the pan.

Making the Filling

  • In another bowl, beat the softened cream cheese and sugar until smooth.
  • Gradually add the melted white chocolate, mixing until fully incorporated.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and sour cream until well blended.

Baking

  • Pour the cheesecake batter onto the prepared crust.
  • Bake in the preheated oven for 50-60 minutes, until set but slightly jiggly in the center.

Cooling and Serving

  • Allow the cheesecake to cool completely and then refrigerate for at least 4 hours or overnight.
  • Before serving, chop fresh strawberries and toss with sugar.
  • Top your cheesecake with the macerated strawberries.
