Instructions
 

Make the Peanut Sauce

  • In a glass jar or blender, combine the creamy peanut butter, tamari, Thai red curry paste, chopped pickled ginger, and toasted sesame oil. Blend until smooth, adding water as needed.

Marinate the Steak

  • In a separate bowl, mix together sweet Thai chili sauce, tamari, chopped garlic, fresh grated ginger, and chili paste. Toss the cubed flank steak in the marinade and let it marinate for at least 10 minutes, or longer for better flavor.

Prepare Skewers

  • Thread the marinated beef onto skewers, leaving space between pieces for even cooking.

Grill

  • Preheat the grill to medium-high heat. Grill skewers for 8 to 12 minutes, turning occasionally until charred and cooked to your desired doneness.

Serve

  • Arrange skewers over rice or coconut rice. Garnish with lime wedges, avocado slices, sesame seeds, and cilantro. Serve with peanut sauce on the side.

Notes
